Cava in Spanish means a cave or cellar that symbolizes the aging of traditional cava wines. The name was established in the 70s to distinguish Spanish sparkling wines from the existing wines.
Cava is produced from specific grape varieties and registered growing areas only. Cava Godofredo originates in the city of Penedes, Spain, the main city for producing cava and in accordance with the traditional method of second fermentation in the bottle.
The grapes are pressed lightly. The rest of the process varies according to the type of cava, but all fermentation is carried out at a temperature control of 16 – 18 ° C for 20 days. The second fermentation takes place in the bottle and spreads over 40 days.
